With a supervision app installed on your child's phone, their WhatsApp chats appear in your panel as they arrive. Nothing is decrypted and the network is not intercepted: the app reads the message on the phone itself, after WhatsApp has already shown it on screen. With a minor child in your care this is generally legal; on an adult's phone, without their consent, it is a crime in almost every country.
WhatsApp is where minors talk the most, and also where the contacts that cause concern show up: unknown adults, groups nobody supervises, messages that are deleted ten seconds later. This page explains what you can really see, what you can't, how it works underneath and where the legal limits are.
In your control panel you will see the chats from the supervised phone: who is writing, the text of each message, the time, the voice notes and the photos or videos shared in those conversations. Also the groups, which tend to be the blind spot of supervision. What you will not see is the history from before the installation: supervision starts the day you set it up, it does not go back. If what you need is to understand a conversation that already happened, no app is going to give it back to you, and be wary of any app that says otherwise.
WhatsApp's end-to-end encryption protects the message while it travels between the two phones, and nobody — not WhatsApp, not us — can read it along the way. A message deleted after it reached the phone has already been recorded in your panel, so you will keep seeing it even if it disappears from the chat. That is the practical difference between checking the phone by hand every now and then and having a record: what gets deleted ten seconds later is often exactly what you would have wanted to read. What cannot be recorded is what never reached that phone. With one limit worth knowing: captured data is deleted automatically after 3 months.

Reading a child's messages is a serious measure and it is worth treating it as such. It makes sense when there is a concrete reason — an unknown adult contacting them, signs of harassment, an abrupt change in behavior — and for as long as that risk lasts.
